Very very simple and so easy to do – but delish and just hits the spot when you want something sweet and filling!!
Put pudding rice in water and cook according to instructions ……. I usually do 1/3 packet at a time and put 2/3 water to it.
Cook on hob or in microwave until rice is soft and water has absorbed (I cook mine in microwave for approx 12 mins, but keep your eye on it!)
Allow to cool and then stir in syn free vanilla yogurt, to the consistency of your liking.
Add sweetener to taste. Keeps in fridge for several days
I then take out the amount I want to eat and vary it by adding, nutmeg, cinnamon, raisins (dont forget to syn if not using raisins as your HEB option) etc – what ever takes my fancy. Sometimes the consistency is a little thick after day one, so add more vanilla (or other flavoured) syn free yogurt to your serving.
Can be eaten hot or cold ;o)
